Ingredients

Onion

  • A tenderloin, beef or pork ham
  • Olive oil
  • Peppers
  • chilli powder
  • 3 onions
  • Pepper
  • Whiskey

Preparation

You will only need a baking sheet and a sharp knife. Here are the steps to follow to prepare these delicious fillets with caramelized onion.

1. Preparation of the meat in the oven

Start by drizzling a skillet with olive oil. Then rub the meat with a mixture of paprika, chili powder and bake at 220ºC for 10-15 minutes. Pierce the meat with a fork and lower to 160ºC until the time is up.

Take the roast out of the oven and let it rest on a plate. The interior will continue to cook for a while, and the juices will redistribute. While you can take care of the onions.

2. Caramelize the onions

Peel the onions and cut them into large rings. Turn the slices into a large greased pan over medium-low heat. Add the pepper and cook slowly, stirring until the onions begin to brown.

Now we will proceed to flambé the onions with whiskey :

  • When the onions start to brown and juices start to come out of the bottom of the pan, pour in a good splash of whiskey.
  • Stir to remove all browned bits from the bottom of the saucepan.
  • Cook until the alcohol has evaporated: you will stop smelling the smoke on the saucepan, and the liquid will have mostly cooked.

3. Fillet the roast beef

Use a very large knife without a saw. Cut as thin as possible slices of roast beef and plate them. The roast will be relatively cool on the outside at this point, so you can use your hands to make the slices as thin as possible.

4. Add the onions

Take the onions out of the oven and put them on top of the roast beef slices.

Now you can serve the caramelized onion fillets. This dish should be served immediately, and you have no doubt that your guests will be licking their fingers. Enjoy them!
