  • Arugula will offer you a great contribution in vitamin K and fiber, while broccoli is a treasure in vitamins A, C and K.

Ingredients

  • 1 tablespoon of olive oil (5 g)
  • 1 clove garlic, thinly sliced
  • ½ cup of onion, minced (110 g)
  • 1 small broccoli, already steamed
  • 2 cups of water (500 ml)
  • 1 pinch of black pepper (1 g)
  • 2 cups of arugula (60 g)
  • 5 tablespoons of lemon juice (50 ml)

Preparation

  • We will start by heating the olive oil in a non-stick pan over medium heat.
  • Next, we add the garlic and onion to fry them a little.
  • Then we will include the broccoli and we will cook it with the sauce for 4 minutes, more or less, until it acquires a bright green color.
  • Add the water and pepper and let everything cook for another 15 minutes.
  • Next step? Very easy. We will add all this combination to our blender, along with the arugula, and we will process it until we obtain a very homogeneous soup.
  • When you serve the soup, remember to add the lemon juice on top: it adds a sensational touch!

2. Radish and leek detox soup

Ingredients

  • 15 small radishes
  • 1 large leek
  • 1 tablespoon of olive oil (16 g)
  • 5 tablespoons of soy milk or cream (50 ml)
  • 3 cups of chicken broth (750 ml)
  • 1 pinch of black pepper (1 g)

Preparation

  • We start by heating the pan with the oil.
  • Finely chop the radishes and the leek.
  • Next, we make a sauce with them. Very easy.
  • Once they have acquired a bright color, we will add the chicken broth to bring it to a boil.
  • We must allow it to boil for at least 15 minutes.
  • Next step? Indeed, it is time to put all this combination of vegetables through the blender.
  • At the time of serving, we will season to taste and, on top, we will add a little cream or, if you prefer, soy milk. It gives it a very tasty touch.

3. Powerful detoxifying beetroot soup

  • 1 tablespoon of olive oil (5 ml)
  • ½ cup of onion, minced (110 g)
  • ½ cup of chopped celery (110 g)
  • 1 cup of chopped beets (200 g)
  • 1 carrot, chopped
  • 5 wild green asparagus
  • 1 tablespoon of chopped fresh parsley (5 g)
  • 1 teaspoon of minced ginger (2 g)
  • 2 cups of water (500 ml)
  • 3 tablespoons miso paste
  • 1 pinch of black pepper (1 g)

Preparation

  • As in the previous recipes, we will start by heating the oil. To do this, we will use a large pot.
  • We will add the onion and sauté it for a few minutes, until it begins to brown.
  • Next, add the celery, minced garlic and parsley and stir for about a minute.
  • It is time to put the water in, and then the beets, carrots and ginger which, as we have indicated, should be well minced or finely chopped.
  • We will add the pepper and salt (if we wish) and we will raise the heat to bring it to a boil.
  • We will cover the pot later, and let it simmer for 10 to 15 minutes.
  • Now, from this mixture, we must use a glass.
  • In that glass of broth we will add our miso and, with the help of a spoon, we will dissolve it. We booked.
  • Now, add the green asparagus to the pot on the fire so that they cook for about 5 minutes.
