How To Make A Light Calorie Neapolitan Flan

Flan is a dessert that is hard to resist. In fact, it tends to appeal to young and old alike. The best? We tell you how you can prepare it without sugar to reduce its caloric intake. You will see that it is just as delicious as the classic grandmother’s flan.

The Neapolitan flan stands out for its fluffiness. Its air-filled texture makes the dessert melt in the mouth and invites us to eat more. Preparing it is much easier than you may think. You will see how in a while you have a tasty dessert to surprise the whole family.

Regarding its nutritional properties, the base of the flan is made with milk and egg. In this case, we have opted for skim milk, since we want to prepare a low-calorie dessert.

It is important to mention that, although skimmed milk is rich in calcium and iodine, and retains the same proportion of lactose and sugars as whole milk, it does lose vitamins A and D in the process in which the fat is removed. If you want your flan to have these vitamins, use whole milk.

Eggs, on the other hand, have a great nutritional value in which their high content of quality proteins and monounsaturated fatty acids stands out. They also provide vitamins A, B (B2, 3, 12 and folates), phosphorus, iodine and selenium.

Finally, we have decided to use ricotta instead of condensed milk, and stevia instead of sugar to reduce the calorie intake and make it a dessert suitable for diabetics. Of course, if you wish, you can substitute the stevia for sugar.

Ingredients for 10 people

  • 2 1/2 cups skim milk
  • 1 1/4 Cup of ricotta
  • 5 eggs
  • 1 tablespoon stevia powder
  • 2 tablespoons vanilla extract
  • Vegetable oil spray (amount needed)

Ingredients for caramel

  • 50 g of powdered sucralose
  • 3 tablespoons of water
  • Splash of lemon juice

Preparation of light Neapolitan flan

Flan

  1. Preheat the oven to 200ºC.
  2. Mix the skimmed milk together with the eggs, cheese and stevia with the blender.
  3. When you get a homogeneous mixture, add the vanilla extract and beat again. Reservation.
  4. Prepare the caramel. To do this, put a saucepan over low heat and add the sucralose. Stir until it changes color (to a blonde shade). Turn off the heat and add the water and lemon juice, stirring constantly.
  5. Spray the flan mold (s) with cooking spray .
  6. Pour in the caramel and then the Neapolitan flan mixture.
  7. Cover with aluminum foil and prepare a bain-marie in the oven. Place a tray with water to cover 1/3 of your flanera and place the mold inside.
  8. Cook for about an hour at 180ºC. Check that the water is not consumed. If so, add more water.
  9. Click the flan and if the toothpick comes out clean, the flan is ready. Let cool to unmold without problems.

Ideas for a change

  • You can  use almond milk instead of skim milk. The amounts would be the same.
  • Decorate your flan with all kinds of fruits: strawberries, cherries, red berries … Whatever you like the most!
  • If you like dulce de leche, try putting a spoonful on top of your flan!
  • You can substitute the ricotta for condensed milk, but you will increase the caloric value due to its large amount of sugars.
