To prepare the best nachos we need a cheese sauce.

Ingredients

The central ingredient for this side is cheese. But we are not referring to just any piece, but particularly to the cheddar type.

We must use 150 to 170 g of this cheese. Its deep, heavy and salty flavor on the palate will give the specific touch. The following ingredients are also needed:

  • 2 tablespoons of butter (25 g).
  • 1 cup (200 ml) of semi-skimmed milk.
  • 2 tablespoons of fine corn flour (20 g).
  • 1 touch of salt will be more than enough to flavor the mixture.
  • 1 pinch of hot paprika. This last ingredient will give the recipe the characteristic Mexican touch.

There are those who prepare a more refined version of the sauce incorporating cream cheese spread ; With this, it is possible to give the food a little more thickness.

Preparation of the cheese sauce

  1. The first thing is to place the butter in a metal pot and put it on a low heat. This will allow us to melt said ingredient.
  2. Next, we add the 2 tablespoons of cornmeal. It is important to stir to homogenize the mixture.
  3. Then we gradually add the cup of milk. Make circular movements with the wooden spoon while pouring to avoid lumps.
  4. We must wait for the entire mass to compact and thicken. It is at this precise moment when we must put out the fire.
  5. Once the fire is off, the central ingredient is added: grated cheddar cheese. With the residual heat from cooking, the cheese will melt and integrate into the mixture.
  6. Lastly, instead, we add the salt.
  7. The paprika is also incorporated last. In general, it can be added to taste, but without overdoing it.

Beat with a good rod is necessary, practically, at all times. If we stop doing it, the lumps will appear or the mixture will not be as homogeneous. In fact,  not enough shake can influence the taste.

When we turn off the kitchen fire, the right thing to do is to keep beating. Why? because we run the risk that the flavor is lost in the heat, and that the paprika burns.

The idea is that the flavor of these ingredients (salt, paprika, and cheddar cheese) can be clearly distinguished.

To finish, we just have to place the sauce in an open glass or plastic container and spread the nachos with it.

A brief history of nachos and their sauce

Nachos were invented in Mexico.

Many times, we believe that certain foods correspond to a certain country or geographic area, since they have a misleading name.

For example,  French fries are not French but Belgian. And the famous donuts, they are not American but Dutch.

For the most curious, we comment that the nachos were created in Mexico in 1943. It all happened one day when a group of military wives entered the Victoria Club restaurant.

Its owner, Ignacio “Nacho” Anaya, was serving, but his cook was not on the premises. So in order to serve his clientele, Nacho got into the kitchen and used his wits to feed the ladies.

He combined corn, cheese and jalapeño tortillas and invented the famous recipe that we know today. This dish became popular and was baptized with the nickname of its creator: Nachos.

But apparently, the thick accompaniment was created in Texan restaurants ; This happened in 1960 and those responsible were the owners of the company Specialty Co , they created the cheddar sauce and a much more crispy toast formula. This is the base of the cheese sauce for your nachos that you have learned to prepare today.
