Vegetable Pancakes

The pancakes vegetables are a tasty snack  with ingredients very similar to that of omelets. However, they differ in their preparation, although the taste is equally exquisite.

These pancakes are very versatile and can be made with a wide variety of ingredients. In addition, they can be consumed hot or cold, it all depends on your taste and the type of event for which you prepare them.

Zucchini pancakes recipe

Ingredients

  • 1 leek
  • Salt.
  • 1 red pepper.
  • 3 eggs.
  • 1 zucchini.
  • 20 g of cream cheese.
  • 1 carrot
  • 30 g of flour.
  • Pepper.
  • Butter.
  • Nutmeg.
  • Olive oil.

  • Big pan.
  • Julienne cut.
  • Cutting board.
  • Mixing bowl.
  • Saucepan or soup spoon.
  • Kitchen paper.

First, wash the vegetables very well using a little warm water, make sure to remove all the impurities that they may have. Then cut the leek into julienne strips and melt a little butter over medium heat. Then sauté the leek that you have cut.

While the leek is poaching, you can julienne half the pepper, the zucchini and the carrot. When the leek is done, add the vegetables you just cut. Salt and pepper to your liking and add a little nutmeg, just the amount you take with your fingers.

Sauté the vegetables for only four or five minutes, without softening them. Remove the vegetables from the heat and reserve for later.

On the other hand, sift the flour into a large bowl. Then add the eggs and cream cheese and beat generously until the ingredients are well incorporated and smooth. Add the vegetables and correct the salt if necessary.

In the pan, place three tablespoons of olive oil and let it heat a little, moving the pan so that the oil spreads. Add a little of the mixture with a saucepan and let it brown on both sides, instead of a saucepan, you can add three tablespoons.

When done, remove from heat and allow excess oil to drip onto a kitchen napkin. Repeat the procedure until you finish with all the mixture.

To serve, we suggest using a homemade tomato sauce, if you are going to eat them hot. In case you prefer to eat them cold, we recommend using mayonnaise.

Vegetable pancakes are very easy to prepare, depending on the time it takes you to cook the vegetables, you can have the dish ready in 20 minutes.

The ideal point of the vegetables is when it is al dente, as this will prevent them from overdoing when you brown the tortillas. If you don’t want to use fresh vegetables, you can buy a packet of soup vegetables.  They are already cut and in some cases you even get them pre-cooked. If you are going to do it this way, you can sauté all the vegetables in one go.

There is a recipe very similar to this, but mashed potato is added instead of flour. In this case, you should use two large or three medium potatoes. The preparation time will be extended a little, depending on the cooking process of the same.

Remember that vegetables can vary according to your taste, so use the ones you prefer. If you like spicy food, you can add a few drops of Tabasco sauce or a little chili powder when you mix the eggs with the vegetables. Vegetable pancakes are the ideal appetizer, delicious, crunchy and healthy.
