Option 1: chicken breast rolls stuffed with serrano ham and baked cheese
Ingredients (for two people)
- 2 whole breasts
- 6 slices of Serrano ham
- 4 slices of cheese (type hawarti or mozzarella)
- Basil
- Oregano
- Pepper
- Butter (three pinches per breast)
- Salt
Process:
- Preheat the oven to 200ºC.
- Open the whole breasts in half, without separating the two halves (which is commonly called book-opening).
- Season the open breast to taste, cover it with Serrano ham and place the slices of cheese on top.
- Begin to roll the breast by pressing starting at the narrow end.
- On a suitable baking dish or tray, place the chicken breast rolls.
- Season the rolls and sprinkle with the basil and oregano.
- To avoid greasing the breasts with oil, place three pinches of butter on each breast. In this way it will melt in the oven and bathe the chicken breasts.
- Place the dish in the oven and bake at 200ºC for approximately 15-20 minutes or until lightly browned.
- Let the breasts cool so that they can be sliced.
These chicken breast rolls can be served as a cold starter, as a tapa or as a second course accompanied by a garnish of potatoes.
An additional trick: Take the opportunity to roast the potatoes in slices in the same tray as the breasts, placing them underneath them.
Option 2: crab surimi stuffed chicken breast rolls
Ingredients (for 2 people)
- Half filleted chicken breast.
- 6 crab surimi sticks
- 1 beaten egg
- Black sesame seeds
- Olive oil and salt
Process:
- Place a breast fillet on a flat surface, put a crab stick on top and roll the breast up. Hold it with a toothpick so it does not unroll.
- Do the same with all the fillets.
- Whisk the egg
- Coat the chicken breast and crab rolls in the egg and then pass them through the black sesame seeds.
- Put olive oil in a pan and heat.
- Fry with very hot oil.
- Once fried, drain the breasts well and remove the toothpick.
Option 3: BBQ Flavored Chicken Breast Rolls
Ingredients for 4 people):
- 4 chicken breast fillets
- 4 slices of cooked ham
- 4 slices of cheese
- Fragrant wine (or cooking sherry)
- Salt
- Oil
- Barbecue spices mix
Process:
- Preheat the oven to 200ºC.
- Spread the breast fillets between two sheets of plastic wrap and hit with a wooden kitchen hammer to stretch them well.
- Salt the breasts and sprinkle them with the barbecue spices.
- Fill the stretched breasts with ham, cheese and roll them tightly.
- Hold the breasts with a toothpick so that they do not open.
- Place the chicken breast rolls in a baking dish and drizzle with a splash of wine or sherry and a little oil.
- Bake at 200ºC for 20 minutes or until golden brown.
- Halfway through cooking (that is, after 10 minutes or so) water again with wine and the juices released by the breasts.
- Once cooked, remove the chopsticks before serving.
